pizza topped chicken

first of all before we get into the blog we are sorry for not uploading are recent posts we have just been very busy lately so today we will be uploading last weeks and yesterdays posts.

you can probably tell that we didn't make this because if we did it probably wouldn't look like this. However we did do the very unfortunate task of eating it (oh how tragic ) we just simply had it with chips and salad but you can pair it with whatever you like.

It honestly tastes so good it would make a very good lunch and it goes with pretty much anything. And trust us its kid friendly just ask our little brothers and sisters ( Lily's 8 year old brother and Amy's 8 year old sister )   

The chicken serves 4 and is done in approximately 1 hour and you might not believe this but it is actually very good for you.

Ingredients for one serving:

½ small red onion, chopped
½ red pepper, chopped
1 small clove of garlic, crushed
1 tbsp stock, made from Vecon/Bovril
2 vine tomatoes, skinned and chopped
1 tbsp tinned tomatoes
1 tsp tomato puree
1 tsp oregano
1 chicken fillet
Fry Light
45g low fat hard cheese, grated
1 cherry tomato, halved
fresh basil, roughly chopped
